ESQUISSE…

My cuisine was forged walking along the banks of the Mediterranean sea as a child... then in Juan les Pins by Alain Ducasse's side, with whom I learn, visiting markets, listening to the noises of the kitchen, tasting, simmering, stewing, braising, cooking, I learn the real cuisine and love it! I follow him in Monaco for 10 years, then around the world, mostly in Asia. At 27 years old, I am chef at La Grande Cascade, then at the celebrated restaurant Lasserre, two stars, before opening my own restaurant in Paris in 2010, Les Tablettes de Jean-Louis Nomicos.

I come from the south, definitely. The fennel releasing aniseed vapours in the torpor of summer, vegetables bursting with sunshine, the iodine strength of the sea urchin, the vibrant delicacy of the red mullet, the garrigue fragrances, childhood memories never leave me, embellished memories, enriched by my passion for the soil of the Riviera which roots are deeply fixed into my personality as well as Italian influences, giving me a taste for risottos, the beauty of saffron, the power of the truffle... In my cuisine, vegetables play an important role, and I like to bring lightness and flavours together.

Le Frank is my second restaurant in which I imagined a cuisine changing throughout the day, always sophisticated, escalating into an elegant restaurant two nights a week. I revisit French cuisine classics, invent compositions to tell culinary stories, have fun at tea time and favour the champagne moment! Two nights a week, I imagine a dinner inspired by an exhibition at the Foundation, a rare wine, a product, a colour...
